Hi Wendy,
I bake this cheese cake, but it shrinked quite a bit on the surface of the cake, and it doesnt look too good~
and the texture of the cake is more dense at the bottom and lighter on top.
Can you please let me know how i can improve on it~

是否水浴烘烤了呢?如果沒有隔水烤,表面就會因為高溫而裂開的。隔水烤是為了緩和溫度上升的速度。

是否事先預熱烤箱了呢?還有,所用的烤箱容積是否較小?這兩個原因有可能造成輕乳酪蛋糕分層。沒有預熱烤箱的話,溫度偏低,蛋糕還沒來得及烤熟就上下分層了。或者是烤箱容積小,水浴之後,烤盤阻擋了烤箱內部熱氣循環,也會導致受熱不均勻而分層。
